Le Cupole 2005
The season and the harvest started in an extremely beautiful way, but both were interrupted by October’s rain. The precocious variety came out at its best. In September we thought the first rain was welcome; we began with the vinification of an excellent Merlot and of a perfect Cabernet Franc, which represent the core of this Cupole 2005.
There were 52 different pickings starting at the end of September, each vinified separately. The process lasted through the end of November.
Vineyard age: 15 years
Vineyard density: 10,000 vines per Ha
Vineyard altitude: 400 – 600 m a.s.l.
Yield per hectare: 30 Hl/Ha
Spraying: Copper, clay, propolis, grapefruit seed extract
Fermentation: Fermentation in stainless steel vats for 10 days, with 1-2 pump-overs and 3-4 punchdowns daily; spontaneous malolactic fermentation followed in the spring
Aging: 8 months in used French barriques, then 10 months in cement
Bottling: February 2007
Production: 70,000 bottles
