Sancaba 2021
Another hot and dry vintage with a particularly dry spring that caused visible cracks to appear in the soil since early April. The use of mulching with straw and grass cuttings to protect the soil from excessive dehydration, was introduced for the first time in the most affected areas with galestro soil type. The unusually arid vintage called for a vigorous cropthinning, in the order of 50% of total crop, so as to assist the vines in carrying forward grape maturity without incurring in undesired raisining. In accordance with the new stylistic course aiming for greater tension and minerality, the harvest was concentrated in the first 10 days of September, thus ensuring the picking of a firm, crunchy crop.
