Sancaba Bianco
The 2023 vintage is the first vintage of Sancaba Bianco, harvested 5 years after the initial planting, from Galestro (flaky calcareous clay) and sandstone soils at 650m of altitude. The handpicked harvest took place on 14-16 September. The grapes we regently pressed and only the first run juice used. Vinification occurred in steel vats at controlled temperature of 12°C with indigenous yeasts for about two weeks. The élevage took place in a 20HL cement tank for 6 months, with frequent stirring of the lees, while a small part was raised in a 2.25HL oak barrique. The blended wine was then clarified and filtered before the final bottling.
